Immersive new menu promises ‘historically adapted’ dishes inspired by ancient delicacies
Tasting menu hotspot Six By Nico has unveiled its latest batch of dishes, taking visitors back in time to sample the flavours and fancies of Ancient Rome across six different small plates and paired wines.
The popular Spring Gardens restaurant – which changes its set-menu every few weeks – will launch its latest collection of mini meals on Tuesday March 15, treating customers to a “historically adapted” menu inspired by the food once eaten by the Romans themselves.
According to their team – which is headed up by chef and chain owner Nico Simone – Six By Nico’s Ancient Rome menu is “inspired by Roman traditions and interpreted through modern delicacies” and will “pay homage to the origins of foods we are familiar with and even enjoy today. From undiscovered recipes to the use of ancient ingredients that are widely used in the modern world.”
Speaking of which, this new array of small plates promises to be unlike anything your tasted before and feature dishes like crispy pasta, black pepper and parmesan royale; white asparagus, crispy duck egg, hazelnut and brown butter; roasted hispi cabbage, cavatelli pasta, pickled chanterelle mushrooms, truffle foam and pecorino sardo.
As always, each of Nico’s plates will be accompanied by a specifically-curated wine that pairs perfectly with each unusual dish. The restaurant’s new menu will be available in-store until Sunday April 24, with the full menu accessible via the Six By Nico website.
